VMDK confusion

So I just started working at a place. I'm the main (only) IT person.
Whoever was here before me has vmware server 2.0 installed.
I don't know much about vmware, I don't claim to. But When I look at this, wouldn't that indicate that it's only using one single hard drive?
I was working on another server, and the host ran out of space, so I went looking and found that the server's one and only vm was taking up all the space. When I checked the website and the .vmx config file, I saw no references to any other vmdk's. So I looked and sure enough there was what seemed to be a random stray vmdk. I deleted it, and noticed that it didn't free up space right away, I thought that was odd. I couldn't figure out why vmware needed it.
Well I went to turn the vm back on and now it's giving the hard drive missing error (won't let me power on the machine)
I'm in the process of recovering the file, but will someone *please tell me where vmware references its hard drives for a VM so I don't do this ever again. *
update I'm screwed. I've been working on this around the clock. I used photorec to look for the file and it found a 40GB file. I was excited. Then I found out that file was completely corrupt. I was depressed. I asked if there was any backup, he said there was, but it was old. Fortunately I was working with snapshots so I wasn't concerned with the date of the base disk. Well he came back with 3 DVDs labeled "disk 1 of 4" etc.. wouldn't you know it, disk #2 was missing. I don't have a clue how that happened, but that set me back. So last night I attempted to rebuild this basic server. I had backed up files before from within the server, but unfortunately they had an unstandard setup. It was a hosted web/email server. I don't know what to do. I am literally on the verge of a mental breakdown. I feel like puking. I keep getting text messages over and over asking me when it will be back and I keep telling them I have no idea. The stress is killing me.
someone tell me it will be okay.
Also I should emphasize I've only worked here for a few weeks. I was actually researching proper hardware before this happened. I don't know how they made it this far without backups. Can you tell how stressed I am????
