Directionless - Looking for ideas for existing gear uses

tl;dr - I have some spare older PCs and a Mac Mini. I'm looking for ideas on ways to use them, or if I should just get rid of them...
Hola amigos-
I'll try to make this as to-the-point as possible:
So, I have a few spare PCs and a Mac Mini(2012 version). In addition to those, my semi-daily driver desktop is a Phenom II x4 955BE, 16GB RAM. My used-more-often-than-not laptop is a Thinkpad T540p (i7, 16GB, 250GB SSD...). I'm running a FreeNAS box for my file server (3TB Raid1), and in addition to (2) NetgeaD-Link 8-port GbE switches, I have (3) Cisco 1841s, (3) 2950s, and a Netgear GS724TP, along with an Ubiquiti ERL-3 and a UniFi AP.
Spare PCs are as follows: * AthlonII x2 eMachine (4GB RAM) * Pentium4 Sony VAIO (~512MB RAM) * 2012 Mac Mini (4GB again) * old 14" Alienware laptop that I've used more for console access than anything else as of late.
My problem is that I'm in a bit of a creative slump. I'd like to use some of my extra stuff for my lab maybe, but I'm not really sure where I want to take it. My interests include, but aren't limited to learning the following: Windows Server management, Linux/Unix, virtualization, networking/netsec....and MAYbe pen testing. Like I said though, I'm just kind of at a loss right now. Should I get rid of the extra stuff and go the virtual route with my desktop and laptop? Set the eMachine up with Server 2012? Hyper-V/ESXi? Run Linux/BSD on the Sony??
I've also thought about getting rid of my Cisco lab (supplemented with Packet Tracer or GNS3) and using the money to buy some more storage for my NAS or....???
What are y'all's thoughts? I would appreciate some direction in this area. Are there other questions I should be asking? Is there more information you need that'd help provide some valuable feedback? Oh, for the budget...can't really afford to buy anything at this point (unless I sell the Cisco stuff), so anything I do I'd like to be doable with the current hardware I own.
  Thanks in advance!
